Baked Potato Fries

Slice three to four large white or sweet potatoes into sticks. I leave the scrubbed skins on. Place in a large bowl and add 2 tablespoons of good oil. (I use extra virgin olive oil) Stir with a spoon to allow oil to coat the potatoes. Place on a baking sheet. This number of potatoes is enough for a 9x13 inch pan. Bake at 400F for about 30 minutes until potatoes are tender and starting to brown. I turn the potatoes with a spatula half way through cooking.
Sprinkle with salt and desired seasonings and serve hot.

I will have to try that. I've tried to make Sweet Potato Fries before by frying them, but they always come out mushy.

My favorite local pub makes the most delicious Sweet Potato Fries, coated with a mixture of salt, brown sugar, and lots of black pepper.

Mmmm yams... I have been craving yams (and carrots... actually anything orange...) I wonder why we have cravings?

Eve, I had these first in a pub place in Pennsylvania, (can't remember the name) I was hooked.
Jaspenelle- I believe our bodies crave what they need. (How does that explain chocolate cravings?? ;-))

Sounds delicious. I'm going to try it.

I saw a show on TV tonight that showed a chef making a vegetable dish that sounded scrumptious. He scrubbed carrots, sweet potato, onions, added a clove of garlic. He then sauteed them in a pan, added a few green peppers that were thinly sliced and sprinkled everything with brown sugar and added a quarter cup of apple cider vinegar. He allowed this to simmer, stirring occasionally until tender. It is different, but sounds good.

Mary- that recipe does sound good! A nice fall comfort dish.
