Rhubarb Squares (or Apple Squares)


The recreation therapist made these with our patients at the hospital. They were very popular!

2-1/4 cups flour
1/4-1/2 cup brown sugar (the original recipe called for 3/4 c white sugar here but I like less)
1 cup salted butter
4-1/2 cups chopped rhubarb*
3 eggs*
3 tablespoons flour*
1-1/2 cups brown sugar* (not packed)

Base:
Mix 2-1/4 cups of flour with softened butter and white sugar. Press 2/3 of mixture into the bottom of a greased 9x13 pan.

Filling:

Beat eggs until frothy, then add sugar, flour and rhubarb and mix well. Pour filling over the base. Sprinkle remaining crumb mixture on top.

*Variation: Apple Squares

Substitute 6 cups of chopped apples for rhubarb and decrease eggs to one. Decrease brown sugar to 3/4 cup and flour to 1 tbsp for fruit mixture.

Bake in preheated oven at 375 F degrees for 45 minutes.

HI Ruth...I have so much rhubarb in my garden...that look so yummy and worth a try. I ususlly make rhubard custard pie!!
